SYRAMENA® Golden is a raw cane sugar that is highly valued for its distinctive caramel aroma and large crystals. Also known as demerara, this speciality sugar is very popular in the baking and drinks industries and is increasingly in demand in organic quality.

We have acquired a new partner for organic raw cane sugar production near Cali, Colombia. One test container of organic raw cane sugar from the beautiful Valle del Cauca region, is already in our warehouse and, despite the difficult shipping situation worldwide, more deliveries are expected to reach Europe soon. Organic demerara sugar – a complex process

How exactly is our SYRAMENA® Golden organic raw cane sugar speciality made? Producing high-quality demerara sugar is a complex process. After the first pressing of the organic sugar cane, the juices that are extracted are evaporated to form cane syrup. This syrup then goes through a process of coarse crystallisation, during which the typical perfectly shaped demerara crystals acquire the required size of 1-1.5 mm.

Caramel aroma and dark golden colour

As soon as the large crystals have formed, the demerara organic raw cane sugar is spun just briefly in a centrifuge so that the molasses do not completely separate from the crystals. Normally a molasses content of 2-3% is retained and it is this that gives the demerara its beautiful dark golden colour, distinctive caramel aroma and slightly malty flavour. In Colombia, demerara sugar is also known as “turbinado”, which simply means “from the turbine or centrifuge” and refers to the fact that it is not refined any further after centrifugation. In recent years, some farmers have turned to growing sugar cane organically in order to produce organic raw cane sugar or demerara and benefit from better prices for their sugar cane.

SYRAMENA® Golden – a versatile speciality sugar

SYRAMENA® Golden is mostly used to add crunchiness to a wide range of baked products and cereals. Because it flows well, our organic raw cane sugar is also perfect for individual sugar portions, for example the sachets of sugar used to sweeten hot drinks such as tea or coffee. And finally, thanks to its pretty appearance, it is also the sugar of choice for crunchy toppings on biscuits and desserts such as crème brûlée.

Demerara – the prettiest of all raw cane sugars

The name demerara refers to the region of Guyana, a former British colony, where this form of raw cane sugar originated and which was initially almost the only place where it was made. The name demerara is still widely used but nowadays it refers to a kind of sugar and no longer to the region that it comes from.
